Food processing and other industrial plants produce wastewater that carries suspended solids, fats, oils, and grease. A centrifuge module takes those out continuously, so the plant sends less sludge to haulers and cleaner water to the drain or back into the process. Dolphin Centrifuge builds these modules in Warren, Michigan around remanufactured Alfa Laval disc stack and decanter centrifuges. The Problem: BOD, TSS, Grease and DAF Sludge
Four numbers usually decide what a food plant does with its wastewater.
- BOD (biochemical oxygen demand) measures the organic load. Flour, starch, sugars, and fats all add to it.
- TSS (total suspended solids) is the particulate fraction. It is what a centrifuge removes most directly.
- FOG (fats, oils, and grease) comes from cooking, frying, rendering, and cleaning. Oily water cannot go down a standard drain.
- DAF sludge is the float and sludge skimmed off a dissolved air flotation unit. It is thick, high in solids and grease, and expensive to haul.
Discharge limits for these parameters are set by the local sewer authority or permit, so check yours before sizing anything. A centrifuge removes the particulate and free-oil share of BOD along with the TSS and FOG. Dissolved BOD stays in the water, and a centrifuge does not change that. This is why a sample test is worth doing before you buy.
The benefits on the sludge side are direct. A decanter produces dry sludge cake, which cuts transportation cost by up to 50%, and the disposal volume is a fraction of the wet sludge. A tortilla factory on one of our decanters reduced waste hauling and disposal costs by over 60%.
Disc Stack vs Decanter for This Duty
The two machines solve different parts of the problem, and the choice follows the solids content of the stream.
- Decanter: a horizontal machine with an internal auger. It runs at 3,100 Gs or higher and handles high-sludge wastewater, up to 50% sludge, discharging dewatered solids and clarified water continuously. Use it for DAF sludge, wash-water sludge, and thickening.
- Disc stack: a high-speed self-cleaning machine that separates micron-level suspended particles and, in the three-phase version, oil as well. Use it to polish lower-solids water and to pull oil out of the water phase. Solids collect in the bowl and eject automatically.
- Both in series: when the water carries both sludge and oil, a decanter takes the bulk solids out first and a three-phase disc stack machine polishes the water and removes the oil. We supplied a two-step system of this kind to an automotive supplier for wash water.

Modules and Capacities
A Dolphin module is a skid with the centrifuge, feed pump, controls, and piping. The skid, controls, and piping are Dolphin engineering. The centrifuge inside is a remanufactured Alfa Laval machine, rebuilt and test run in Warren, Michigan. The disc stack classes are the DMPX-042 and DMPX-070, and the decanters are the NX series.

Every flow is tied to its duty. Capacity falls as the sludge percentage rises, so the final size comes from your sample. Larger flows use more than one machine.
Examples from food and related plants:
- Bakery wash-water: a Texas bakery processing 20,000 GPD of wash-water with flour and organic residues used a Dolphin-modified Alfa Laval NX-414 decanter to recover clean water for sewer discharge.
- Onion process water: one of the largest onion producers in California uses an Alfa Laval NX-416 2-phase decanter to dewater organic sludge from wash-water at 40 GPM (flow measured in that installation).
- Tortilla factory: an Alfa Laval NX-314B-31 decanter thickens flour sludge. Hauling and disposal costs fell by over 60%, and the separated water was clean enough for sewer discharge.
- Grease trap waste and yellow grease: a Midwest collector processing about 6 million gallons a year uses a DMPX-042 module on an Alfa Laval WHPX 510 at 30 GPM on yellow grease at 180 F (flow measured in that installation), with an NX-314 decanter and a coarse pre-strainer ahead of it. Stainless Steel and Sanitary Considerations
Wetted-part material matters on food wastewater. This is what we offer.
- All-stainless systems: systems with full stainless-steel wetted parts (piping, valves, tanks, and centrifuge) start around the mid-$60Ks, EXW Warren, MI.
- Decanters: the NX 418 and NX 314 bowls are 316L stainless steel, with a tungsten carbide hard-surfaced auger and Stellite bushings on the sludge ports for wear.
- Disc stack: the WHPX 513 and WHPX 407 bowls are 316L stainless steel with some red metal parts. An all-stainless-contact version, the DMPX-070-SS, is offered. See stainless steel centrifuges and food grade centrifuges.
- Fasteners and enclosures: exposed fasteners on our remanufactured machines are upgraded to stainless steel, and control panels are available in NEMA 4X stainless enclosures.
We do not publish a sanitary certification or a clean-in-place rating for these wastewater modules. If your plant has either requirement, state it in the inquiry and we will confirm what a given machine supports.
Case: Silicon Wafer Wastewater
This case is not food, but it shows what a disc stack module does on very fine particles. A silicon wafer facility generating over 50,000 gallons a day of silica and diamond grinding wastewater replaced an ultra-filtration system with a Dolphin DMPX-070 module on a remanufactured Alfa Laval WHPX 513, sized for a 50 gallons per minute stream.
- Before: membrane cartridges at $350 each, replaced every 3 to 6 hours, about $1,400,000 a year in membranes plus $33,000 in labor. Total annual cost $1,433,000.
- After: the centrifuge system total annual cost is $154,000, with no membranes. Annual savings are about $1,279,000, an 89% reduction in operating cost.
- Pilot: a 1-gallon sample of the facility's wastewater was tested first. The test showed complete removal of particle contamination and clear, reusable water.
